Theme Night: Mexico!

Welcome to Friday Theme night! Zak and I started this tradition about a month ago and we're having so much fun coming up with new foods to eat and new drinks to make and (my personal favorite) new desserts to enjoy!!

We had a special guest for this night. My sister Alyssa was on her way north to move back into school and she came through SF so we could go north together.

What Mexican themed night would be complete without tequila? We made some margaritas, snacked on delicious chips (but I forgot the salsa ... hmm...) and consumed this delicious vegetarian enchilada.

Vegetarian Enchiladas, chips (sans salsa :( ), and margaritas. 

I originally found the base recipe in a really old cookbook & messed around with it until I figured out the right ingredients)



I've made this quite a few times before and let me tell you, it is absolutely delicious every time. Eating veggies gives us a nice break from the heavy way meat makes us feel. Don't get me wrong, I love a good piece of chicken or steak. But it feels good to lay off those heavy foods for a while and enjoy some sauteed, slightly spicy veggies.

We didn't do a dessert tonight, but we did eat my fresh baked pretzels (what?!) Yep! Alyssa and I baked pretzels!

I think all my dinners are "themed" unless they are fusion, which can be a theme, too, right?
